Abstract: The research study is about the changing food in the Bishnoi community in Rajasthan. This study was carried out in three phases and this study is to understand the o study the present food culture of the Bishnoi‟s in comparison with the past and present scenario. This study also attempts to understand the change in food habits of elderly, youth and children of the Bishnoi community. In addition to this, the study also attempts to understand the impact of t he market and state in agricultural activity and food consumption. And also to understand the process of agricultural change, in terms of cropping pattern, use of modern technology, chemical fertilizer, pesticides. The place chosen for this study is three district of Rajasthan. The research is purely qualitative based. In this study the pervasively resource person were chosen. For the primary information the ground discussion, semi - structure interview, participant observation and also observation to gathe red the qualitative date. The finding of this study show that food as marker change among the Bishnoi, in the rural area it has been still there but in the city we won‟t find the same taste. The markets also its role through activity like cash crop and usi ng fertilizer in the farm etc.
